I got a crossman gel target with a springer that I grabbed for like $10 at a princess auto tent sale, and I love it. It's not the same one as in the picture (it's square), but it's the same idea. I've since gone back and bought a few of these targets.
I might be confused as to what targets you guys are referring to, but the gel on the targets I'm thinking of is thick enough to absorb the impact of the BB. I've even hit the plastic frame around the gel, and while it did dent it, it hasn't cracked yet.
My biggest problem with these targets is that if you hit it at close range with "our" guns, you have to grab each BB and pull it off of the gel (you can't just rub your hand over it, or lightly pluck them off).
It's definitely worth it for target practice though. Since it holds onto the BB (the ones I have do, anyway. They don't slide down like in the video) you know exactly where you shot, just like a paper target. But unlike the paper target, it holds onto the BBs, so they don't bounce all over the place.
